Bean Vegetable Soup

For someone who has struggled with gut health for so many years, I focus on making meals that support digestion and gut heath.

This soup is packed with veggies- giving you all the vitamins and antioxidants. The beans and spinach give you protein and fiber- supporting digestion, feeding your muscles and fighting those sugar cravings. 

Recipe

1 shallot, finely chopped

5 cloves, finely chopped

2 large carrots, finely chopped

1 stock of celery, finely chopped

15oz can kidney beans

15oz can great northern white beans

16oz bag spinach

1/2 tsp smoked paprika

1/2 tsp oregano

Olive Oil( I use extra light)

Salt

In a large pot, saute chopped shallots and garlic with a light drizzle of olive oil and salt. Then add the chopped carrots and celery to the pot and continue to saute for 1 minute. 

Rinse the canned beans then add them to the pot. Cover with water(about 6 cups). Add the spinach and cook over high heat for 5 minutes.

Add spices then cover pot and cook for 25 minutes over low heat.
