Mushroom Pesto Pasta

This pasta is so warm and earthy! The mushroom pesto combo is just right!


1 box bow-tie pasta

1 15 oz can coconut milk

8 oz baby belle mushrooms

1 tbsp avocado oil


2 cups fresh basil leaves

1/2 cup fresh parsley

1/2 cup pine nuts

2 cloves fresh garlic

1/2 cup avocado oil

1 lemon

Salt and Pepper

In a food processor, blend all of the pesto ingredients until combined. 

Saute mushrooms with 1tbsp of avocado oil and sprinkle of salt in a large pot then move them to aside.

Boil water in the same pot and cook pasta according to packaging instructions.

Drain the water from the pot, then add the coconut mil, mushrooms, pesto and added salt and pepper to taste.
