Chocolate Cupcakes

You know that feeling of heaviness, oiliness and sluggishness after you eat the most delicious rich chocolate cupcake or dessert?! 

My recipes are developed with organic and wholesome ingredients, using gluten free fours, non refined sugars and healthy oils so that you can still enjoy the same deliciousness without feeling heavy or sluggish. 

1 cup oat flour

1/2 cup tapioca flour

1/4 cup almond flour

1/2 cup coco powder

1 1/2 tsp baking soda

1 1/2 tsp baking powder

2 eggs

1 cup coconut sugar

1 cup almond milk

1/2 cup oil*

1 cup hot water 

1 tsp vanilla extract

1/3 cup chocolate chips

Preheat the oven to 350 degrees.

In a large bow, combine the dry ingredients then add in the wet ingredients. Combine all together. Add in the chocolate chips.

Pour batter evenly into cupcake holders.

Bake for 30-35 minutes. 

Frosting

1 cup powdered sugar

1/4 cup sunflower oil

Combine powdered sugar and oil really well, releasing all the clumps. 

Let the cupcakes cool, then frost!

*I use either coconut oil, avocado oil or sunflower oil
