Spinach Tomato Fettuccine


1 box of fettuccine pasta

2 Roma tomatoes, cut

16oz bag of spinach

3 cloves garlic, crushed

3 tbsp, light olive oil divided 

Salt and Pepper

1/2 tsp dried oregano

1/2 tsp garlic powder

Add 1 tbsp of the olive oil to a pot, and saute the garlic, spinach and tomatoes for about 2 minutes. Move it aside.

Fill up that same pot with water and boil. Cook pasta according to instructions package.

Before you drain the water, take a glass measuring cup and remove a cup full of the water to save.

Drain the rest of the water. Pour the save water back in the pot with the pasta, and add the vegetables to the pot. Add the spices along with the remaining olive oil. Stir together and serve!
