Arugula Sweet Potato Salad
Perfectly Balanced with Nutrients and Flavor
This salad has leafy green Arugula which is high in potassium and folate, avocado for healthy fats, sweet potatoes which are a great source of fiber, energy and brain focus, grapes for sweetness and red onion for crunch. Add feta cheese for extra protein!
Recipe
- 2 cup of arugula
- 1 sweet potato, cubes and roasted
- 1/2 cup grapes, slices
- 1/4 c goat's feta cheese
- 1/2 red onion, thinly sliced
Dressing:
- 1/4 c olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- salt
- pepper
- 1/2 tsp dried oregano
